  Chocolate Cherry Protein Muffins


Ingredients:

- 1 cup rolled oats

- 1 cup chocolate protein powder

- 1/4 cup cocoa powder

- 1 tsp baking powder

- 1/2 tsp baking soda

- 1/4 tsp salt

- 2 ripe bananas

- 1/4 cup Greek yogurt

- 1/4 cup honey or maple syrup

- 2 eggs

- 1 tsp vanilla extract

- 1/2 cup unsweetened almond milk

- 1 cup frozen cherries, chopped

- 1/4 cup dark chocolate chips


Instructions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a blender or food processor, grind the rolled oats into a fine flour-like consistency.

3. In a mixing bowl, combine the oat flour, chocolate protein powder, cocoa powder, baking powder, baking soda, and salt.

4. In a separate bowl, mash the ripe bananas, and then add the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract. Mix well.

5. Pour the wet ingredients into the dry ingredients and stir until just combined.

6. Slowly add the almond milk and continue mixing until you have a smooth batter.

7. Gently fold in the chopped cherries and dark chocolate chips.

8. Spoon the batter into the muffin cups, filling each about two-thirds full.

9. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

10. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
