Egg White Vegetable Frittata
Ingredients:
- 8 egg whites
- 1 cup diced mixed vegetables (bell peppers, onions, spinach, tomatoes, etc.)
- 1/2 cup reduced-fat cheese (optional)
- Salt and pepper to taste
- cuisine spray or a bit of olive oil painting
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In an oven-safe skillet, lightly coat it with cooking spray or olive oil and heat over medium heat.
3. Add the diced vegetables and sauté for a few minutes until they start to soften.
4. In a bowl, whisk together the egg whites, salt, and pepper.
5. Pour the egg white mixture over the sautéed vegetables in the skillet.
6. Let the mixture cook on the stovetop for a couple of minutes until the edges start to set.
7. Sprinkle cheese (if using) evenly over the top.
8. Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the frittata is set and the top is lightly golden.
9. Remove from the roaster and let it cool for a many twinkles.
