Grilled Margherita Pizza Skewers
Ingredients:
- 2 large ripe tomatoes
- 8 fresh basil leaves
- 8 small fresh mozzarella balls (bocconcini)
- 8 cherry tomatoes
- 2 tablespoons extra-virgin olive oil
- Salt and pepper, to taste
- Balsamic glaze (optional, for drizzling)
Instructions:
1. Preheat your grill to medium-high heat.
2. While the grill is heating, prepare your skewers. Thread the following ingredients onto the soaked wooden skewers in this order: a cherry tomato, a basil leaf, a bocconcini, a basil leaf, a cherry tomato, a basil leaf, and finally, a slice of ripe tomato.
3. Brush the skewers with extra-virgin olive oil and sprinkle with a pinch of salt and pepper.
4. Place the skewers on the preheated grill. Grill for about 2-3 minutes on each side or until you see grill marks and the cheese starts to soften.
5. Carefully remove the skewers from the grill and transfer them to a serving platter.
