Mediterranean Chickpea Wrap
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Whole wheat wraps
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- Tzatziki sauce for serving
Instructions:
1. In a pan, heat olive oil over medium heat. Add chickpeas, cumin, paprika, salt, and pepper. Cook until chickpeas are golden brown.
2. Warm the whole wheat wraps.
3. Assemble wraps by placing a generous scoop of chickpeas in the center.
4. Top with cucumber, cherry tomatoes, feta cheese, and Kalamata olives.
5. Drizzle with tzatziki sauce.
6. Fold in the sides and roll up the wraps.
